Ingredient checklist

Method

0 of 9 steps complete
  1. No timer needed

Dice the onion, chop the garlic and chipotle, and measure the sauce ingredients. Open the chicken thighs flat, trim substantial visible fat and season with 3 g salt. Do not wash raw chicken. Wash hands and clean its board and utensils before preparing the uncooked slaw; keep raw chicken away from ready-to-eat ingredients.

  2. No timer needed

Heat 10 ml oil in the wide pan over medium heat. Cook the onion for 7 minutes until softened but not deeply browned. Add the garlic and oregano and stir for 30 seconds. Add the chipotle, adobo sauce, passata and 75 ml water, then bring to a gentle simmer.

  3. 12:00

Add the chicken in one snug layer and spoon sauce over it. Return to a gentle simmer, partly cover and cook for approximately 30 minutes, turning after 12 minutes. Avoid a hard boil. If the sauce starts catching, add water in 25 ml increments. While the chicken cooks, prepare the slaw ingredients and bake the tortillas as below.

  4. No timer needed

Once the chicken is simmering, heat the oven to 200°C conventional / 180°C fan. On a clean board, finely slice the cabbage, grate the carrot, chop the coriander and cut the serving lime into wedges. Measure the lime juice. Keep the cabbage and carrot undressed for now and set the coriander and wedges aside.

  5. 07:00

Brush both sides of the tortillas with the measured 15 ml oil and arrange four on each tray without overlap. Bake for 7 minutes, then turn them and swap the tray positions. Bake for another 7–10 minutes, checking frequently near the end and removing individual tortillas when lightly golden, dry and rigid. Cool uncovered on wire racks for 3–5 minutes; they should become crisp enough to snap. Return any flexible tortillas to the oven for 2–3 minutes. With only one suitable tray, bake two batches and allow an additional 12–18 minutes.

  6. No timer needed

Check the thickest part of the largest thigh with a clean thermometer: it must reach 75°C for 30 seconds. The meat should also pull apart readily; if it is safely cooked but resistant to shredding, simmer for another 5 minutes and check again. Transfer the chicken to a clean plate. Simmer the sauce uncovered for 5–10 minutes, stirring regularly, until a spoon drawn through it leaves a brief trail and a spoonful has no watery halo. While it reduces, use clean forks to shred the chicken across the grain into short strands.

  7. No timer needed

During the sauce reduction, about 10–15 minutes before serving, toss the cabbage and carrot with the lime juice, 5 ml oil and 2 g salt. Leave briefly at room temperature while finishing the chicken.

  8. 03:00

Return the shredded chicken to the thickened sauce and simmer for 3 minutes, until steaming hot and evenly coated. Taste before adding any of the remaining 1 g salt, as adobo can be salty. Add the optional sugar only if the sauce is unusually sharp. If the mixture is too thick to stir easily, loosen it with 1 tablespoon water; it should cling to the chicken without pooling.

  9. No timer needed

Divide the hot chicken mixture between the 8 crisp tostadas, roughly 85–95 g each depending on reduction. Lift the slaw from its bowl, leaving pooled dressing behind, and add approximately 50 g to each. Scatter over the coriander and serve immediately with the lime wedges. Assemble only what will be eaten straight away.

Chef tips

  • The timeline assumes two trays and thighs that become safely cooked and tender after the stated simmer. Allow longer if the thermometer or texture check requires it.
  • A narrow pan reduces more slowly. Use a wide pan that holds the thighs in one snug layer, and follow sauce texture rather than an exact final weight.
  • Thin tortillas can brown before thicker ones dry. Remove them individually; flexible tortillas need further drying, not extra oil.
  • If the sauce is too hot or salty, add a little extra passata and reduce again before returning the chicken. This increases the topping yield.
  • Keep toppings separate until serving: even properly reduced sauce will soften an assembled tostada as it stands.

Equipment check

  • Wide, heavy-based 3-litre saucepan or sauté pan, approximately 26–28 cm across, with a lid
  • Two baking trays with usable surfaces approximately 30 × 40 cm, each holding four tortillas without overlap
  • Wire cooling racks
  • Pastry brush
  • Digital food thermometer
  • Sharp knife and separate or thoroughly cleaned boards for raw chicken and ready-to-eat vegetables
  • Coarse grater
  • Slaw bowl
  • Clean plate, tongs and two forks

Behind the dish.

Overview

The goal is smoky, moderately hot chicken, sharp crunchy slaw and a brittle tortilla base. Simmer the thighs gently, remove them before reducing the sauce, then return the shredded meat to a thick coating with no watery pool. Bake the tortillas until dry and rigid, and assemble only at serving time.

Ingredient notes

Use small soft corn tortillas rather than large flour wraps. Ready-made crisp corn tostadas are a useful substitute: omit the 15 ml brushing oil and warm only as their packet directs. Canned chipotle chillies and their adobo sauce vary in heat and salt; for a milder version, use 10 g chillies and 10 g adobo. Chipotle paste is not a gram-for-gram substitute: follow its label and start with 1 teaspoon. Red cabbage can replace white cabbage at the same trimmed weight.

Check tortillas, canned adobo and substitute pastes for declared allergens, particularly wheat. This recipe is only gluten-free if all packaged ingredients are verified gluten-free.

Serving & storage

Serve two tostadas per person with lime wedges. Lift the slaw out of its dressing rather than pouring the bowl over the chicken. Store components separately: cool chicken promptly in shallow portions and refrigerate within 2 hours at 5°C or colder; refrigerate slaw promptly too. Use both within 48 hours, or freeze the chicken sooner. Thaw frozen chicken in the fridge and reheat only once until steaming hot throughout. Keep fully cooled, unassembled tortillas airtight at room temperature for up to 2 days; recrisp in the oven if needed.
