Huevos rancheros with tomato-jalapeño salsa

Lightly fried corn tortillas topped with sunny-side-up eggs and warm tomato-jalapeño salsa. Keep the tortilla centres tender, their edges lightly crisp, and the salsa thick enough to complement rather than soak them.

Ingredient checklist

Method

0 of 7 steps complete
  1. No timer needed

Prepare the tomatoes, onion, jalapeño and garlic as listed. Chop the coriander, squeeze 5 ml lime juice and cut the serving lime into wedges. Keep the garnish and lime separate from the salsa vegetables. Set out two plates and a wire rack.

  2. No timer needed

Heat 5 ml oil in the saucepan over a medium heat. Add the onion and jalapeño and cook for 4–5 minutes, stirring, until softened without heavy browning. Add the garlic and stir for 30 seconds.

  3. 12:00

Add the tomatoes and 2 g salt. Bring to a bubbling simmer, then cook uncovered over a medium-low heat for 12–18 minutes, stirring occasionally. The tomatoes should soften into a lightly chunky salsa, with no separate watery puddle; a spoon drawn through it should leave a brief trail. Very juicy tomatoes may need another 5–10 minutes. If it catches before the tomatoes soften, add water 15 ml at a time.

  4. No timer needed

Stir in the lime juice and taste. Adjust the seasoning if necessary; use the serving wedges for any extra acidity. Cover and keep over the lowest heat while frying, so the salsa stays hot without reducing further.

  5. 00:30

Heat the frying pan over a medium-high heat. Using the allocated 15 ml oil gradually across all four tortillas, fry them individually for about 30–45 seconds per side. Stop when small blisters and lightly crisp edges appear but the centres remain pliable. Allow 5–7 minutes for all four. Lift onto the rack in a single layer; do not stack or cover them.

  6. 04:00

Reduce the pan to medium-low and let it settle for about 1 minute; the oil must not be smoking. Add the remaining 10 ml oil. Crack each egg into a small cup and slide it into the pan, keeping the four eggs separate. Sprinkle with the remaining 0.5 g salt. Wash your hands after handling shells and keep raw egg away from the garnish and plates. Cook gently for 3–5 minutes, checking at 4 minutes: the whites should be fully opaque and set, with soft yolks. If the upper whites lag behind, cover for the final 30–60 seconds rather than increasing the heat. While the eggs cook, stir the salsa and check it is still hot. For unassured eggs, or diners requiring thoroughly cooked eggs, continue until both whites and yolks are firm.

  7. No timer needed

Place two tortillas on each plate and top each with an egg, lifting individual eggs as soon as they are ready. Divide the hot salsa between the plates, spooning it around and over the whites while leaving the yolks visible. Scatter with coriander and serve immediately with the lime wedges.

Chef tips

  • The timeline allows a typical salsa reduction. Juicy tomatoes or thin tinned tomatoes can take longer: finish reducing before frying the tortillas.
  • If the salsa is watery, simmer uncovered a little longer, stirring. If it thickens too far while being kept hot, loosen with 15 ml water and heat through.
  • Use the measured tortilla oil gradually; prolonged frying makes the tortillas brittle rather than lightly crisp.
  • A 28 cm pan should fit four eggs without crowding. With a smaller pan, cook two portions sequentially and serve each immediately, allowing extra time.
  • If egg bases brown before the upper whites set, lower the heat and briefly cover the pan. Do not turn up the heat to finish the whites.

Behind the dish.

Overview

This Mexican breakfast serves two, with two tortillas and two eggs each. A gently reduced, lightly chunky salsa provides savoury tomato flavour and jalapeño heat. Make it first, then fry the tortillas briefly so their edges crisp while their centres remain flexible. Assemble only when the eggs are ready.

Ingredient notes

Use soft corn tortillas, not tostadas. Out of tomato season, replace the fresh tomatoes with 400 g tinned chopped tomatoes, including their juice; reduce to the same spoonable consistency and taste before adding lime. A fresh green chilli can replace the jalapeño, but start with less if its heat is unknown.

For runny yolks, use British Lion-marked hen eggs or eggs covered by the Laid in Britain assurance scheme. These may be served lightly cooked to most people under UK guidance. Severely immunocompromised people should have thoroughly cooked eggs and follow their clinician's advice. Cook eggs outside these schemes until both whites and yolks are firm.

Allergens: contains egg. Check tortillas for wheat and other declared allergens; any gluten-free substitution must be suitable for the diner and prepared without cross-contamination.

Serving & storage

Serve immediately with coriander and lime wedges: the salsa gradually softens the tortillas. Store leftover salsa separately in shallow portions, refrigerating within 2 hours at 5°C or colder. Use within 48 hours or freeze sooner. Reheat only once, until steaming hot throughout, and prepare fresh tortillas and eggs to accompany it.

Good things come to those who cook.
